This shrub, which can reach three meters in height, produces catkins (a botanical term) as flowers, and this is the part harvested for use in haute cuisine. Its natural habitat
Dune pepper is found throughout much of eastern North America, especially in Canada. It thrives in moist, nutrient-poor soils, such as rocky sites, sandy areas, leveled terrain, and mountains. The shrub also grows well near marshes, streams, lakes, and rivers. It can be harvested throughout the winter months, but it is recommended to pick it toward the end of autumn for peak flavor.
